Recipes for the Resort: Tomato & Blueberry Salad

Summer is almost over and let’s hold on to it for as long as we can. First start with this fresh yummy salad. This salad recipe was found on a website called Sweet Paul. This Tomato & Blueberry Salad serves 4 and Sweet Paul shares a lovely tip that you can substitute other greens if radish leaves are not easy to find.


30 small heirloom tomatoes, cut in half

1 cup fresh blueberries

1 bunch small radish leaves

3 tablespoons olive oil

2 tablespoons sherry vinegar

salt & pepper, to taste


1. Place tomatoes, blueberries, and radish leaves on a platter.

2. Drizzle with oil and vinegar and sprinkle with salt and pepper.
